So I've had some cheepoo panels for many years now but on the crafter I won't proper jobs. Wanting 200w (2 100w panels ) and controller ( mppt ) we will not have mains hookup so all power is battery. Whats best one big battery or two average batteries ?
Use: cool box for nox something bigger later, led lighting, serval usb sockets, water pump.
Any thoughts?

Go for two of the biggest batteries you can get. You have the room for them so may as well have too much power than not enough. You can get some titan gel ones that are pricey but meant to be very good.
As for solar panels I would go solid rather than flexible on your crafter. Again you have the roof space
